Anyway, today’s flashback - rabbit rillettes. I made this for the dinner party a while back and it was a good opener. Poached in house duck stock and some aromatics, this guy was mixed up with some aggressive seasoning and tart cherries before getting potted and capped with duck fat.
I have one jar left and it might be time to break it out of the fridge and get onto some grilled toast this weekend.
